This easy to make at home dish will quickly become a favourite of family & friends alike. It tastes just like you would find down a side street of any eastern Mediterranean town. Tender chunks of lamb seared to perfection, served with pita bread, tzatziki and all the trimmings.

Ingredients
- ½ kg lamb shoulder, cut into 3cm cubes
- 1 tsp quality dried oregano
- 1 tsp salt
- 1 tsp pepper
- ½ tsp each of cumin & sweet paprika (optional)
- ½ a fresh lemon
- 2 tbsp extra virgin olive oil
- 2-3 tbsp dry white wine
Chicken or pork can be substituted to suit your palate
For Serving
- warm pita bread
- 2 ripe tomatoes, sliced
- 1 medium red onion, sliced
- Greek-style yogurt (or tzatziki)
- cayenne pepper for a little extra zing (optional)
Method
- Mix all of the herbs & spices together
- Sprinkle over the meat and combine with the olive oil and wine
- Marinate the meat for a minimum of 30 mins, but better up to 4 hrs, covered in the fridge
- Skewer the meat using souvlaki/kebab skewers
- On a hot skillet or pan, sear the meat, turning to ensure even colouring on all sides
– lamb can be pink in the middle – chicken/pork must be cooked through
– for that authentic smokey taste, grill over a charcoal barbecue - Squeeze the lemon over the meat just before removing from the heat
To Serve
This dish can be served either open on a plate or wrapped in pita bread. Crispy fried chips will bring extra smiles to everyone.
Bonus Recipe – Greek Style Tzatziki
- 2 cups Greek yogurt
- 3 cloves of garlic – crushed (more if you like a bit of oomph)
- small bunch fresh dill, finely chopped (or cucumber or both)
- a squeeze of fresh lemon juice
- 1 tbsp extra virgin olive oil
- nice pinch of salt & pepper
Mix everything together – as easy as that. Will store nicely in the fridge in a sealed container for a week.
