Celebrating Lunar New Year – an all time favourite that is easy to make and will have everyone licking their plates clean.

Like most stir fry dishes, the cooking happens rapidly so it is best to have all the prep done beforehand.
Ingredients
- 300g fillet steak, sliced
- cooking oil
- 1 large onion, sliced
- 2 cloves garlic, peeled & sliced
- 5 slices fresh ginger
- 1 red capsicum, seeded & sliced
- 1.5 tablespoons fermented black beans
- 2 large red chillies, sliced
- 3 stalks green spring onion, cut into 1-inch pieces
- ½ tablespoon Chinese rice wine (Shaoxing cooking wine)
For the Seasoning Mix
- 1.5 tablespoons corn-starch
- 1 tablespoon oil
- 1 teaspoon sugar
- 1 teaspoon light soya sauce
- 1 teaspoon dark soya sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon salt
- pinch of white pepper
For the Sauce
- 1/3 cup water or beef stock
- 1 teaspoon sugar
- 1 teaspoon oyster sauce
- 1 teaspoon sesame oil
- 1 teaspoon light soya sauce
- 1/2 teaspoon dark soya sauce
- 1/2 teaspoon salt
- pinch of white pepper
Method
- Mix all of the ingredients in the seasoning mix together
- Mix all of the gravy ingredients together in another bowl and set aside until the last step
- Take the seasoning mix into the beef slices
- Allow to marinate from anything from 20 minutes to overnight
- Add 4 tablespoons cooking oil to a wok or a frying pan and when it is hot, add the seasoned beef and fry until browned
- Remove from pan and set aside
- Add another 2 tablespoons of oil and add the onion, garlic and ginger and fry
- Add in capsicum and black beans
- Continue cooking until the capsicum is fully cooked
- Add red chillies, spring onion, Chinese rice wine and return the beef back to the pan
- Stir in the gravy mixture
- Bring to a boil and remove from the heat
To Serve
Serve immediately as is or over some steamed jasmine rice
